The Perfect Spring & Summer Salad | kale & brussel sprout salad w/ warm bacon dijon dressing

A few summers ago we attended a block party where a similar salad was served. Prior to eating that salad I had sworn off kale due to an unfortunate bout with the stomach bug hours after eating homemade kale chips.

After that party I started trying to recreate this salad and what you see is what came out of multiple attempts. I will say the dressing makes the salad. If you haven't discovered this yet, I'm a dressing and dip girl. What Southern girl isn't though, right?

KALE & BRUSSEL SPROUT SALAD WITH WARM DIJON DRESSING

2 cups of raw kale, chopped

1 cup of raw brussels spouts, chopped

1 large shallot, chopped

parmesan cheese, a couple handfuls

salt and pepper

Chop the kale and Brussels sprouts and toss together with the chopped shallot and parmesan cheese. Season with salt and pepper to taste.

For the dressing (you won't use all of this for the salad, but it saves well)

4 slices of bacon, cooked and chopped

1 cup dijon mustard

1 lemon, zested and juiced

1/4 cup olive oil

Mix mustard, lemon zest and juice together until well combined. Stream in olive oil while whisking mustard mixture. Once combined, fold in chopped bacon. You can even add a little bacon fat for additional flavor.

Drizzle 1/3 cup on top of salad and toss. You can add more if you like, however overdressing it will wilt the kale leaves.

Serve and Enjoy!
