Taco Tuesday | Greek Tacos with Low Carb Naan Bread

Tacos are a weekly thing in our house. Whether served on hard or soft tacos, or with lettuce as a wrap or salad, tacos are a super easy, quick, and most loved dinner in our house. Another loved dinner is when I make greek food. I think quite possibly they could drink my tzatziki sauce! This week I decided to marry the two dishes together and serve greek tacos on naan bread.

I have a sincere love for naan bread. I'm not sure if its the bread itself or the memories we have made while eating naan! When my oldest two kiddos were around 3 and 4 years old there was a new greek restaurant in our little town. It was family owned and in order to cater more to families they offered a night where the kids could make their own pizza. They would get a chef hat and an apron and dough with toppings. They would get to create their own special pizza and it would then get baked and served to them. While they were busying their little hands my husband and I would eat naan. Baskets and baskets of warm, garlicky naan bread. Oh my goodness, I can still see my kids' smiles and messy little hands. Those are some of the best memories!! I think naan takes me back to that time in our life and gosh what a wonderful time it was!

If you have followed me for any amount of time now you know we limit our carb intake. Naan is traditionally made with all purpose flour. A 1/4 cup of flour has about 25g of carbs. Twenty Five grams is still very low if you are watching your carb intake, however this would probably limit you to just one piece of naan considering the other carbs you consume throughout the day. I decided to try and make a low carb version of naan using a blend of coconut and almond flour. I purchased the Bob's Red Mill Paleo Baking Flour which for every 1/4 cup contains only 13g of carbs. I won't call this "keto friendly" because I personally believe the ability to stay in ketosis while consuming carbs is really on a person by person basis.

This naan bread recipe only calls for 2 ingredients: flour and greek yogurt. Not only is it simple to make, it is also pretty easy to work with. I did notice the dough was a little sticky, but I used the tried and true method of adding a little flour to my hands and the counter top. I rolled the dough out on the flour so it wouldn't stick to the counter and I used a spatula to transfer the dough from the counter to the grill pan.

I used a grill pan to achieve grill marks, of course you can also use a regular pan to quickly fry these up as well!

INGREDIENTS:

NAAN BREAD TACO SHELLS

2 cups Bob's Red Mill Paleo Baking Flour (a little extra for rolling out)

1 tbsp baking powder

1/4 tsp salt

3/4 cup greek yogurt

brush with olive oil and garlic if desired

GREEK CHICKEN

2 lbs chicken breast tenders

Cavender's Greek Seasoning (season as desired)

TZATZIKI SAUCE

1 cup greek yogurt

1 cucumber, shredded using a cheese shredder

1/4 cup pickle juice

chopped dill

garlic powder

salt & pepper

TOPPINGS

chopped red onion

sliced tomatoes

feta cheese

DIRECTIONS:

Naan:

Sift together flour, baking powder, and salt. Mix in greek yogurt (use hands) until formed into dough ball. Heat grill pan over medium high heat. Pull of 8 equal pieces and begin rolling them out. Put a little flour on countertop if dough is too sticky. Add garlic to olive oil and brush each side and move the rolled out dough to grill pan. Grill for 2 minutes each side and remove.

Chicken:

Heat over to 350 degrees. Season chicken breast tenders with Cavender's Greek Seasoning. I use a heavy hand with this because it is so yummy!!! Sear chicken in a skillet to form a crust on the outside, about 2 minutes each side. Move the seared chicken into the over for 15 minutes. Chicken will come out perfectly cooked and juicy!

Tzatziki:

Peel cucumber and shred onto a stack of napkins or paper towels. Cucumbers hold water and you will need to remove as much as possible to the sauce is not watered down. I usually allow the cucumbers to sit for a while and then come back and "wring" them out with the paper towels. You may need to do this a couple times to remove as much water as possible. Add cucumbers to greek yogurt, season with salt and pepper, add minced dill, and pour in pickle juice. Mix all together and put into refrigerator. Tzatziki is so much better when its cold!

Toppings:

Chop the veggies. This is the easy part!!

Assemble your Greek Taco on top of the naan bread. Add a piece of chicken, top chicken with tzatziki, and then put veggies and feta on top of that. I usually sprinkle a bit more Cavender's on the top just for good measure!
