Once turkey burgers became popular a decade or so ago, I haven't wanted to go back to beef. At burger restaurants the finest ground beef will be on the menu and I still order the turkey burger!
I personally love the leaner meat, but not everyone in my family feels the same way. The most common rejection I hear from everyone is turkey is too dry. Turkey does dry out quickly! It has basically zero fat at all and when cooked simply as basic beef burger with salt and pepper it definitely will become extremely dry. In order to hold more moisture inside the patty, veggies are a must! All of the peppers, onion, and herbs will release moisture and make the patties are moist and tender and oh, so delicious.
My dad came up with a similar recipe of this one a few years back. It's been one of my favorites for years, however I adapted it a bit by adding the feta cheese. The great thing about this burger is you can change it up! Make it Mexican inspired by subbing the parsley for cilantro. Add ginger and basil and chiles for a more Thai inspired burger. This basic recipe here can go so many different, delicious ways!
Yes, I know, I know... avocado isn't pictured here! I totally thought I had one in the bowl, went to grab it and it wasn't there! Such is the life of a mama on the go who doesn't have time to redo the recipe for it goes live on the blog! Oh, well! Just imagine three slices placed across the top of that burger.
PS: Yes this is the keto version. I know not everyone eats keto. The easy fix for all my carb loving friends is to add a bun. The better carb version would be to peel and slice a sweet potato, drizzle with olive oil, sprinkle with salt and pepper and pop into a 350 degree oven to girl
Mediterranean Inspired Turkey Burgers
1 lb ground turkey
1/2 small onion, chopped
3 small sweet peppers, chopped
1/2 jalapeño, chopped
handful parsley, chopped
handful of crumbled feta cheese
salt
pepper
garlic powder
2 tbsp coconut oil
avocado
stone ground mustard
1. Preheat oven to 350 degrees.
2. Chop all veggies. Add veggies, cheese and seasoning to ground turkey. Mix with hands until combined. Form into patties.
3. Heat coconut oil in pan over med-high heat.
4. Add patties to hot oil and fry for 5 minutes each side. (If they seem to be searing too quickly, lower heat to medium)
5. Once both sides are seared, place inside oven to cook an additional 5 minutes.
6. Top with avocado and stone ground mustard.
