My Favorite Keto Dessert - No Bake Key Lime Cheesecake {recipe}

I was never a dessert girl before I started the keto diet. I was the person who said, "No, thank you" to cake and ice cream at birthday parties and instead went for a second (or third) plate of hot dogs and chips!! I still prefer savory over sweet, however since I've been on the keto diet I do find myself craving a sweet treat every now and then.

Here is the thing with keto desserts...you have to stay away from flour replacements if you are looking for something close to the "real thing." This may just be a personal opinion, but I have yet to find a keto dessert I like made with a flour replacement. We've tried brownies, cookies, cupcakes, chocolate soufflés made with both almond flour and coconut flour. In my opinion these flours just don't translate well to desserts. I find they are extremely heavy, dense, dry, and gritty.

I have a few go-to recipes, but this No Crust Key Lime Cheesecake Whip is something I make weekly, usually in mass portions. No shame over here! It only takes me maybe 5 minutes and I can make a lot ahead of time and it will keep all week. I keep it in a covered in a Corning Ware dish in the refrigerator and spoon out 2-3 tablespoons (or more, wink wink) when a sugar craving hits. If you need that crunch, you can make a crumble crust using almond flour and melted butter and mix in a little swerve or truvia, but trust me this cheesecake is full of flavor without the crust!

INGREDIENTS

1 PACKAGE SUGAR FREE CHEESECAKE JELLO PUDDING MIX

8oz HEAVY WHIPPING CREAM

1 CUP WATER

8oz WHIPPED CREAM CHEESE

LIME JUICE, 5-6 SQUEEZED

DIRECTIONS

Put all ingredients in a bowl and whip together with hand mixer.
