These three keto recipes are always made and on hand in our house. Not only are the delicious, but they are easy to prep and still taste great heated up throughout the week! PS: If you want more info on the keto diet I recommend this site.
Sausage Balls
One thing that makes me feel like I’m not missing out on anything is to make things that I absolutely LOVE to eat. Sausage balls are a staple in the South baby showers, wedding showers, and holiday family meals. Traditional Southern sausage balls are made with Bisquick. My keto version is made with a blend of almond and coconut flour. You would never know the difference!
1 lb breakfast sausage
2 eggs, beaten
.5 cup almond flour
.5 cup coconut flour
2 handfuls parmesan cheese
dash of salt (don’t use much because the sausage and cheese make these very salty already)
2 tsp baking powder
PS – you can also add crumbled bacon and cheddar cheese to these to add some variation!
Preheat oven to 350. Line cookie sheet with parchment paper. Mix dry ingredients together. Mix all ingredients together in a bowl. Using a tablespoon, scoop out the mixture and roll into a ball and place on parchment paper. Bake for 25 minutes.
Broccoli & Cheddar Soup
The easiest, yummiest, creamiest soup! Obviously this is gonna be better in those cold months, but it’s so easy I don’t know that I’ll ever not have it available for a quick heat up for lunch!
broccoli florets – I use frozen, but you can use fresh too
cheddar cheese – grated
heavy cream
milk, as needed
Steam broccoli, drain well, and chop. Slowly heat heavy cream in a pot, season with salt and pepper, add broccoli and grated cheese and stir slowly until cheese melts. Use milk to thin out as needed.
Egg Muffins 2 ways – Jalapeño Popper & Spinach with Feta
These aren’t anything new that I’m sure you haven’t seen all over Pinterest when you search ‘keto recipes.” I make mine a bit different by separating the whites and yolks which makes them fluffier!! These are two of my favorite egg muffin recipes.
Jalapeno Popper Egg Muffins
1 dozen eggs, separated
jalapeños – diced, fresh
cream cheese, whipped (so much easier to work with)
bacon, cut thin and cooked crispy
Preheat oven to 350. Whip egg whites. Beat egg yolks together. Whether you use cupcake liners or not, I recommend spraying to make the muffins easier to remove. Cook bacon, dice jalapeños. Fold yolks into whipped egg whites until combined. Add a little cream cheese to the middle of each muffin tin. Add bacon and jalapeños to muffin tins. Pour combined egg mixture into each muffin tin. Bake for 15 minutes.
Spinach with Feta Egg Muffins
1 dozen eggs, separated
spinach, fresh
garlic
feta cheese, crumbled
Preheat oven to 350. Whip egg whites. Beat egg yolks together. Whether you use cupcake liners or not, I recommend spraying to make the muffins easier to remove. Sauté spinach with garlic until wilted. Fold yolks into whipped egg whites until combined. Add a little spinach and feta to muffin tins. Pour combined egg mixture into each muffin tin. Bake for 15 minutes.
