Keto Edible Chocolate Chip Cookie Dough

You’ll notice I don’t talk much about food on Miranda Southern. I do enjoy cooking and baking, but these days with a full house and many responsibilities I usually resort to a quick crock-pot meal or prepackaged cookies. I’m also not ashamed to admit after school snacks are usually Lunchables and Easy Mac! During the holidays though I seem to be more inspired to spend a little more time in the kitchen creating foods for my family to enjoy. Just another way I can give, I guess.

My. husband has the sweet tooth in the family so usually about once a week he’ll ask me to get him something for those late night cravings. The trick however is finding something he will actually eat. Along with having a sweet tooth, he’s a bit of a health and fitness nut, and very few things go into his body that he hasn’t already predetermined will be there and be used accordingly. His requirements are low carb, low sugar, and big taste, which is pretty hard to find and even hard to make at home!!

We recently visited a local spot here in Nashville called Sam T. Spoonlickers that serves nothing but edible cookie dough. (In case you are wondering, this is NOT a sponsored post.) They have at least 10 flavors of edible cookie dough ranging from original chocolate chip cookie, to s’mores, to vegan brownie. You even have the option of adding toppings to make your own unique creation. Obviously it was a huge hit for our family and that got the wheels in my brain spinning. I just knew there had to be a way I could make this edible cookie dough at home and make it fit into my husband’s macros without sacrificing taste.

When I say sacrificing taste I’m referring to alternative sweeteners. I am not fan of alternative sweeteners. artificial or natural, regardless if they are healthier for you. If something says “sugar free” I will immediately pass it over. I then discovered SWERVE sweetener and I must say it is delicious! (PS. This is not a sponsored post either, just something I LOVE!) SWERVE is made from ingredients found in select fruits and starchy root vegetables, and contains no artificial ingredients, preservatives or flavors. It is much milder than refined white sugar and has zero alternative sugar taste. I actually prefer the taste over refined sugar.

This Edible Chocolate Chip Cookie Dough is low carb and low sugar which works great if you follow Keto, a low carb diet, or even if you simply count your macros and want a sweet treat. I feel that everything should be moderation in all things and these “fat bombs” are an excellent way to get your fats in and have a yummy treat as well!

Edible Chocolate Cookie Dough

MAKES 20 BALLS.

SERVING SIZE 1 BALL

139 CALORIES/ 2g PROTEIN/ 2g CARBS/ 14g FAT/ 2g SUGAR

8oz cream cheese, softened

1 stick salted butter, softened

1/2 cup creamy peanut butter (I use Smucker’s Natural)

1/3 cup SWERVE sweetener (the BEST tasting alternative to sugar, trust me!)

4oz dark chocolate chip morsels

Mix all ingredients together with a hand mixture. Line a baking sheet with parchment paper, form 20 balls using 1 tbsp per ball and place on parchment paper. Place into freezer to harden the cookie dough. These will be ready to eat in about 1 hour. Enjoy!
